ITALIAN MEATBALL & PEPPERONI SUBS

Perfect to serve up on the weekends or holidays when coming to and from sport or the beach, these Italian style meatball subs make a delicious filling lunch or snack.          

The kids (and adults) will love them!

INGREDIENTS

  • 500g MINCED BEEF
  • 1 EGG
  • 1/2 CUP BREADCRUMBS
  • 2 TBSP ITALIAN SEASONING
  • 1/2 CUP PARSLEY, CHOPPED (OPTIONAL)
  • 1 TBSP EXTRA VIRGIN OLIVE OIL
  • 6 BREAD ROLL SUBS
  • GRATED CHEESE
  • PEPPERONI SLICES
  1. Preheat oven to 180 deg C

  2. Combine minced beef, egg, breadcrumbs, parsley and Italian seasoning in bowl and mix well. Roll mixture into meatballs, approx 1 tablespoon of mixture each.

  3. Heat oil in a large frypan over medium-high heat. Cook evenly rolling meatballs around every few minutes or until brown and cooked through.

  4. Combine canned tomatoes and Pizza Pasta Seasoning and puree using a stick blender to make a smooth sauce.

  5. Turn frypan to low and add Pizza Pasta Sauce to the cooked meatballs. Fold sauce through meatballs to coat evenly.

  6. Slice bread roll subs along the top length ways, and place on a baking tray lined with baking paper.

  7. Place 3-4 cooked meatballs in sauce into the subs (number may vary depending on the length of bread rolls) and a small amount of extra sauce to each roll. 

  8. Place a piece of pepperoni between each meatball and sprinkle with grated cheese. 

  9. Bake for approx 10 mins or until cheese has melted and slightly golden.

Tips: The meatballs can be made in advance, and you can get creative by adding your favourite ingredients between the meatballs. Try recreating all your favourite pizza topping combo's - capsicum, mushrooms, olives and more.
